Founded in 1997, Apicius International School of Hospitality represents the first example of hospitality studies at the higher-ed level in Italy. Apicius gathers disciplines related to food and wine studies, hospitality, and sports and health sciences.

JAMES BEARD FOUNDATION
Apicius is the only academic entity with an ongoing academic collaboration with the James Beard Foundation through the TuttoToscana study away program. Students and faculty are involved in special event development and production featured at the Foundation’s NYC location.
WACS
Apicius is the first institution in Italy whose culinary studies are recognized by WACS (World Association of Chefs’ Societies) for quality culinary education.

APICIUS in the Community - CEMI
The school features four community projects that have opened their doors to the city. Apicius academic courses are involved in the back of the house and front of the house operations of each CEMI. Ganzo is located in Sant'Ambrogio, a Florentine neighboorhood with a unique food history, and Dimomra, Fedora, and Sorgiva are located within the Palazzi Community Center.

- Dimora Creative Learning Lab, the student-operated AUF guest apartments experience.
- Fedora School Pastry Shop and Creative Learning Lab, the student-operated pastry shop.
